I first tried pizza topped with Gorgonzola at my friend’s panini shop. I am a fan of it’s salty flavor. My daughter and I love to cook together, so we’ve been experimenting with a variety of pizza toppings! The Gorgonzola and potato combo is one of my favorites so far.
Here are the ingredients – gorgonzola dolce cheese, garlic, extra virgin olive oil, basil, dutch potatoes, and pizza dough/crust.
Make your own pizza dough (check out my friend’s recipe for pizza dough here presleyspantry.com/, or buy your favorite pre-made crust. I like Trader Giotto’s Brand Pizza Crust, so I used it for this recipe. The crust fits on a sheet pan and I can cut it into rectangular slices. It’s not messy, and pre-baked so our pizza is ready within minutes.
Ingredients
- 4 dutch potatoes
- 2 garlic cloves, finely chopped
- 4 Tablespoons extra virgin olive oil
- Fresh Rosemary
- A handful of Gorgonzola dolce (or other soft blue cheese)
- Mixed greens (optional)
I minced two garlic cloves and sliced potatoes with a mandolin. In a bowl I tossed together olive oil, garlic and potato slices. Next, I brushed a generous amount of olive oil onto the pizza crust. Then I placed potato slices from edge to edge of the pizza crust. You can overlap the slices, or have them touch. From there, crumble the cheese over the potatoes. You can sprinkle Parmesan too if you’d like. Lastly, break apart the rosemary, and scatter over the pizza.
My pizza was placed on a sheet pan into a preheated oven at 425 degrees. Then cooked for 5-8 minutes.
Yum! I actually topped my pizza with mixed greens, then cut into it but the greens are optional. The cheese adds a bite with it’s robust flavor, on top of thinly sliced delicious potatoes, with a final crunch of crispy dough. It’s happiness in every bite.
