Summer salads are the best, and seasonal fruits are a sweet addition. Peaches and strawberries are two of my favorites. They inspire me to create simple meals and sides without having to turn on the oven.

The best summer salads draw me in visually – bright and colorful. Next, I consider the textures and flavors that I am craving. For today’s salad, I selected sweet peaches, crunchy yellow bell peppers, and a greens mix with spice and snappiness. Layering the flavors for me make the most complete salad course. Finishing all my salad with a sprinkle of nuts, like walnuts or almonds, and a drizzle of an EVOO-based vinaigrette is all I need to dive in.
Simple Summer Peach Salad
- 4-6 cups mixed greens
- 2 large peaches, sliced
- 3/4 cup of a yellow bell, diced
- 1/2 cup chopped walnuts or sliced walnuts. Toast for extra depth.

Homemade Dressing
- 1 tbsp extra virgin olive oil
- 1/2 tbsp fresh lemon juice
- 1/8 tsp salt
- fresh black pepper, to taste

Wash your peach and bell pepper. Slice/dice them for your salad. Place mixed greens in a bowl, top with peaches, pepper, and walnuts. In a smaller bowl put together the olive oil with the balsamic vinegar, lemon juice, salt and pepper, and drizzle over the salad. Bon Appetit!
