One of the things I love to have is a hearty dish that is simple to make, and delicious. I have two small kids and I try to serve a variety of dishes as well as something healthy! They love rolled up chicken meals because there is a surprise in the middle so it makes dinner fun and exciting! You can swap out the ingredients for almost anything you like! Don’t have broccoli, use zucchini, asparagus, mushrooms etc. My kids love the String cheese because of the stringiness- we mixed it with the Swiss for this one! Play with your food and get the kids involved!
- 4 Chicken Breasts
- 4 TBSP mozzarella
- 4 Broccoli Florets
- 4 TBSP Swiss Cheese
- 1 ½ Cups Bread Crumbs (GF if you are on a GF Diet)
- 2 TBSP grated Parmesan
- 1 TBSP Schnitzel Spice (A Pinch of German)
- 1 TBSP Spicy brown mustard
- Salt and pepper
Directions:
Cut chicken horizontal to create 2 halves (easier to cut if partially frozen). Once defrosted, pound each half so that it is about ¼ inch thick or at least even from end to end. Season both sides with Schnitzel spice and salt and pepper. On the side facing up, smear a little of the mustard. On the same side add some of the shredded cheese, and broccoli onto one end of the chicken (I guesstimate and try to keep it even for each piece of chicken). Then Roll the chicken around the broccoli and Swiss and shredded Parmesan cheeses as tight as you can and secure with twine, toothpicks, or metal skewers. Mix the bread crumbs with the grated Parmesan cheese. Roll the chicken in egg wash and then breadcrumbs and put in a greased baking dish and bake at 350 for about 35-40 minutes.
I serve with a fresh salad and mashed potatoes.

One question: “horizontal” cut is diagonal or across the width of the breast?
Hi there!! If you lay the breast down place your hand on the top then cut across the middle from the side between cutting board and your hand.. Make sense?
