Looking for a simple, citrus dessert recipe the entire family will enjoy? Try a key lime, no-bake cheesecake dessert. They are a wonderful combination of tart flavor and creamy texture. Enjoy any time of year, but especially refreshing during these warmer summer days. This is the perfect recipe to repurpose the Oui yogurt jars I’ve kept. The jars are cute, and I find it’s the perfect serving size for the cheesecakes.
Thanks to Melissa’s Produce for supplying the key lime for my group’s monthly challenges. These little citrus fruits are bold, and each one is packed with intense flavor. I surprised my husband with these key lime cheesecakes. He’s a huge key lime fan, loved the bottom layer of graham crackers, and was impressed with my homemade whipped cream.
Recipe for No Bake Key Lime Cheesecake
INGREDIENTS
1 package of crushed graham crackers
2 tablespoons brown sugar
3 tablespoons butter, melted
14 oz can sweetened condensed milk
8 ounces cream cheese, softened
1/3 cup key lime juice (I squeezed fresh juice)
1 1/2 teaspoons lime zest
Whipped cream
I made my own whipped cream with heavy whipping cream and granulated sugar.
INSTRUCTIONS
I crushed the graham crackers using my mini food processor and added melted butter.
Press the crumbs into the bottom of each Jar. I filled about 1/4-1/3 of the jars with crumbs.
Beat the cream cheese until smooth in the food processor Add the condensed milk and lime juice and mix well.
I then added lime zest to the cream cheese frosting.
Divide the mixture on top of the graham cracker crumbs. Cover each jar with foil and freeze until firm. I added a dollop of my homemade whipped cream then topped with a key lime slice and I topped with a sprinkle of graham crumbs!
Let me know if you try out this recipe. Remember to use key limes, and not regular limes.
Tip: Key limes start off green, but turn yellow when they are ripe. They are adorably delicious.
