Soups are the perfect antidote for the winter blues. Whether you are nursing a winter sniffles, or in a dinner planning slump – the answer is soup! Creamy soups are my favorites, but they aren’t always the healthiest due to the addition of heavy creams. Or so I thought before I discovered this awesome cauliflower potato soup.
Even better the ingredient list is short, and easy to find in the wintertime. Find cauliflower, garlic, potatoes, salt, pepper and veggie broth. Look further for your favorite toppings, such as bacon, cheese and green onions.
The first step is to boil your cauliflower for about 10 minutes. While preparing the cauliflower. Sauté the garlic. I minced them and sautéed for about 3-5 minutes.
Second, cube potatoes. I used about 2 lbs of red potatoes and kept the skins on, since this adds more texture and nutrients. The potatoes took about 15 minutes. Make sure they are tender by poking with a fork.
Once done, combine the potatoes, cauliflower, salt and pepper and veggie broth into a blender. Blend until creamy. Simmer in a saucepan for nice warm soup.
Yum! Serve in bowls and top with your favorite garnishes.

- 1 large head cauliflower
- 8 cups water
- 2 cups of vegetable broth
- 2 tablespoons olive oil
- 8 cloves garlic
- 1 teaspoon sea salt
- 1/2 teaspoon cracked black pepper
- 1.5 2 lbs red potatoes peeled and chopped into cubes
- additional salt and pepper to taste
- optional toppings, bacon, shredded cheese and green onions
