Every Holiday Season my sister makes amazing peanut butter balls. This year I decided to borrow her recipe and try to make them myself. They are delicious! The recipe makes a ton so you can add them to a festive tin to make a nice little gift for everyone.
- 1 box crushed graham crackers (I had no idea they sold them already crushed! Look for them on the baking aisle)
- 2 lbs peanut butter (I like smooth but you can also use crunchy)
- 2 lbs margarine (softened at room temp)
- 2 tsps vanilla
- 1 large bag chocolate chips
- 2 lbs powdered sugar
- toothpicks
- wax paper
In a large bowl mix the peanut butter, margarine, powered sugar, crushed graham crackers and vanilla. This requires a bit of arm work and another reminder to soften the margarine! Put the bowl in the refrigerator for 30 minutes. Roll the peanut butter mix into ball shapes and put on a cookie sheet with wax paper, stick a toothpick in each ball. Refrigerate them while you melt the chocolate chips. If you have a double boiler use that or I filled a pot with water and added a glass bowl over it and melted the chocolate that way. Next take the balls and dip them in the melted chocolate and place them back on the wax paper. Store these in the refrigerator on the trays until they have hardened.

Oh man those are good! I made them last year for Christmas and I screwed it up by burning the chocolate (totally my fault) and they were still good LOL.
