This Eggcellent Sandwich is the perfect sandwich for any time of the day! Thanks to our friend Tommy, over at egg me on for sharing it with us! – Erika
Ingredients:
– 1 tablespoon of butter or margarine
– 2 slices of split-top wheat bread
– 1 large egg
– 2 slices of white American cheese
– 2 slices of honey ham, thinly sliced
– Dijon mustard
– Salt and pepper
Cut a 2 ½ inch hole in the center of one slice of bread, and spread Dijon mustard on one side of the other slice. Add 1 tablespoon of butter to a nonstick pan over medium-low heat. When the butter starts to foam, add the cut slice of bread and lightly toast for about 1 minute. Crack the egg into the hole, season with salt and pepper and fry until the bread is golden brown and the egg has started to set. Carefully flip the egg bread over and then add the cheese, ham and the other slice of bread, Dijon side down. Fry until well browned on the bottom and then flip again. Fry until the bread is golden brown and the cheese has melted. Remove from the pan, cut diagonally and eat.

I think I know what’s on the menu for breakfast this weekend! And my almost 2 year old will happily eat any of the bread taken out to make the hole in each piece!
