My sister shared this Super Easy Chicken Caesar Salad Recipe recipe with me. This meal is quick to make and perfect during the lazy summer months. It is so easy to throw it together and the homemade dressing is amazing. I used a pre-cooked rotisserie chicken when I am making it. You can also roast or grill your own chicken for it.
Ingredients:
- small cooked rotisserie chicken from supermarket
- three hearts of romaine (cut up )
- 1 bag Caesar Salad Croutons
- 1 cup Shredded Parmesan Cheese
Dressing:
- 3 tablespoons olive oil
- 1 1/2 tablespoons fresh lemon juice
- 2 teaspoons Worcestershire sauce
- 2 teaspoons Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 garlic clove, crushed
Shred the chicken and combine with cut up romaine lettuce in a large bowl. Prepare the ingredients for dressing in separate bowl and whisk them until blended. Next add the croutons and cheese to the salad. Pour the dressing over the salad. I use a covered bowl and shake it all up. You can also just mix it all together. Enjoy

Oops…quick question on the dressing. Is that enough to dress all that lettuce and chicken or should I double it?
The verdict….this dinner was delicious! My husband loved it and I think it was very tasty.
