I was trying to keep my recipes focused around the Holidays this month BUT this weekend was when I could cook something that WASN’T Holiday related. This tasty soup is easy to make and can be enjoyed right away or freeze for when you’re short on time. Next week I will share my favorite peanut butter ball Holiday treat recipe =)
Ingredients:
- 1 lb angus stew beef
- 2 med size zucchini
- 2 med size summer squash
- 1 can of cut green beans
- 1 28 oz diced tomatoes with oregano, garlic and basil
- fresh basil chopped
- 1 garlic clove
- 1 32 oz beef broth
- 1 8oz package of dried cheese tortellini (I like barilla)
Sautee beef in olive oil, garlic and basil until cooked through then add to your soup pot or dutch oven. Add the summer squash and zucchini to the pan and sautee for 5 minutes. Next add to the beef with the diced tomatoes, green beans and beef broth and cook for 15 minutes add the tortellini and cook until done.
