Chocolate covered pixie tangerines? Yes, please!
What’s not to love about this dessert? It’s chocolate and tangerines with a touch of sea salt. They are super easy to make! Melissa’s Produce provided their Ojai Pixie Tangerines (hurry, they go out of season soon!) and I thought I’d surprised my daughter with a Friday afterschool treat. After a quick taste-test, pixie tangerines quickly became one of her favorites, so this was a perfect fruit for this delectable treat.
Did I say they are super easy to make? I picked up a bag of semisweet chocolates and a bag of dark chocolate chips. My daughter’s favorite is dark chocolate, but I prefer milk or semisweet. I added 1/2 tablespoon of coconut oil to thin out the chocolate and give it a creamy texture. I melted the chocolate on the stove stop (microwave works well), peeled the tangerines and removed most of the pith. I dipped half of the tangerine into the melted chocolate and placed the slice on a parchment sheet. Be careful not to over sea salt. It can be too-salty so I recommend one or two crystals just drop them over the chocolate before it hardens. Colored sprinkles would be fun instead of sea salt or just forgo a topping.

Ingredients:
- 5 pixie tangerines
- 1 cup of chocolate chips of your choice
- 1/2 tablespoon coconut oil
- Course Sea Salt (optional)
- Peel the clementines, remove the pith (it’s prettier), wash and dry the clementines.
- Place the clementine slices on a parchment paper-lined baking sheet.
- Melt chocolate and add the coconut to a double boiler (*This can also be done in a microwave). Stir until melted.
- Dip half the clementine in the chocolate then lightly sprinkle with sea salt.
- Let the chocolate set or to speed up the process and refrigerate for 10 minutes before serving. Viola!!
Need tips on how to make a double broiler?
- Add 1” of water to a medium saucepan or pot and bring to a very gentle simmer.
- Place a heat-safe bowl on top of the pot so that the bottom of the bowl is not touching the water.
- Add the chopped chocolate to the bowl and occasionally stir with a spatula until smooth and melted.
- Remove the bowl from the heat and use.
