These amazingly sweet Oreo Cupcakes are sure to make everyone want to be your Valentine! My daughter saw a picture of them and begged me to make them. I chose to go with store bought cake mix, whipped up a simple cream cheese frosting and of course added plenty of Oreos.
Ingredients:
- 1 box vanilla cake mix (make sure you have the ingredients listed on the box to prepare)
- 2 packages of Oreo Cookies
- 4 cups powdered sugar
- 1/2 cup softened butter
- 8 oz cream cheese at room temperature
- 1 teaspoon Vanilla Extract
Cupcakes:
Preheat Oven to 350. Line two muffin trays with cupcake liners. Take apart 24 Oreo’s and add the half with the cream to each cupcake liner (cream side up). Coarsely chop 20 Oreo’s and then prepare the cake mix as directed (save the crumbs to garnish the cupcakes with). Fold the chopped Oreo’s into the cake mix and divide the batter into each cupcake tin. Bake at 350 degrees for 17 minutes or until a toothpick comes out clean.
Frosting:
Add room temperature Cream Cheese to a large bowl and mix with 1/2 cup of butter until smooth. Stir in 1 teaspoon of vanilla. Then slowly blend in 4 cups of confectionery sugar and mix until smooth and creamy.
Once the cupcakes have cooled frost them and sprinkle the leftover Oreo crumbs on top.
