There are so many times when something with substantial flavor and crunch to eat is just, well, necessary. Like around 4:30pm when the kids are home from school and I’m trying to come up with something for dinner and I’m just a little bit hungry – you know, the aptly-named “arsenic hour”? A good, tasty CRUNCH is perfect then. I also yearn for a good crunch, in the form of a good chip, when I have some wonderful dipping thing in front of me like salsa or hummus. Oh, and there’s also when I want something different than potato chips to accompany a burger or sandwich. That’s why I now have a collection of Snikiddy’s Eat Your Vegetables® chips in my pantry – for whatever reason is behind the need for crunch.
There are veggie-based chips on the market that are good but they still taste like the vegetable. When you just want interesting chip flavor without trying to convince your kids (and yourself) how good a beet can really be if it’s turned into a chip, this is a great option. Made with kale, carrots, sweet potatoes, beans and other veggies, the chips just taste flavorful – not like one veggie or another. They have several varieties of flavors from the basic like Sea Salt or Italian Herb & Olive Oil, to Sour Cream and Ranch and Korean Barbecue. We got a variety of flavors and mixed them in a bowl. While Sea Salt was a good go-with-everything chip, for pure eating on its own pleasure, we loved the zingy Korean Barbecue and exotic Curry flavors. All of the chips have great crunch which is an important criteria for me come that magical time of day!
There’s a fun story behind the Snikiddy® company’s name – The company was founded by a mother (Janet Owings)/daughter (Mary Sculman) team. When Janet was a child, she and her siblings took healthy foods for lunch and became known as the persnickety kids, shortened to snikiddy. Instead of being insulted, the kids were proud of their new nickname. When Mary had children of her own, she was disturbed by the trends toward childhood obesity and the foods that contained high fructose corn syrup and other unhealthy ingredients. Together, they created not only the Eat Your Vegetables Snacks, but also Baked Fries and Cheese Puffs. The snacks have non-GMO ingredients, are certified gluten-free, and have 3 grams of protein and fiber per serving.
