Roasted crispy garlic potatoes are tasty and simple to make. My 11-year-old daughter actually prepared the side dish for dinner. A friend of mine went to culinary school and taught my daughter knife skills. Therefore, my daughter is comfortable slicing potatoes and even mincing fresh garlic! So, if your kids don’t mind getting their hands dirty, put them to work! We used Melissa’s Produce pee wee medley potatoes for this recipe.
First, prepare the garlic. We used 8 cloves from a bulb. Remove each clove then remove the peel. This can be done by hand or by placing it under the blade of a chef’s name and pressing down on the knife. My daughter loves to smash garlic Cut off the thick end of the clove, then slice the entire garlic clove lengthwise. Once done, slice the clove crosswise.
Wash and cut the pee wee potatoes in half. Place the potatoes in a large bowl, mix in olive oil, cracked pepper, and salt as well as parsley. My daughter mixed everything together by hand. Once combined, spread the potatoes on a baking sheet. Make sure that they are spread out evenly and not overlapping.
Turn on the oven to 400 degrees and bake for 20-25 mins. Take the potatoes out and flip them, return them to the oven for another 20 mins. The potatoes should be nicely browned and crispy. Add more salt to taste.
We served this with chicken tenders and broccoli. The entire family was pleased with the way the potatoes turned out.
1 pound of potatoes
8 garlic cloves minced
1 tablespoon salt and pepper
1/2 cup of Olive oil
Parsley
We really eyeballed the measurements. Add more or less seasoning for desired taste! You can also add less garlic, but we enjoy a strong garlic flavor!
