Ingredients:
- 3 cups dry penne pasta (or about 1/2 the box)
- 1 Large Summer Squash
- 1 Large Zucchini
- 1 container grape tomatoes
- 40z goat cheese
- 2 tablespoons fresh parsley
- 2 tablespoons fresh basil
- Olive Oil
- 2 cloves chopped garlic
Cook the pasta according to directions. Slice summer squash and zucchini into moon shaped pieces, Slice tomatoes in half and slice goat cheese into think slices. Sauté summer squash and zucchini in 2 tablespoons olive oil until lightly browned. Remove from pan and set aside. Sauté garlic for 2 minutes adding the tomatoes, parsley and basil cook for 2 -3 more minutes. Add the zucchini, summer squash, goat cheese and pasta and mix all together until the cheese is creamy. Top with leftover parsley.
