This delicious chicken soup is a staple in our house. I occasionally change this recipe up depending on what ingredients I have on hand. It is super easy to make and a perfect way to get your servings of veggies. I put the brands I use but feel free to use any of your favorites. The beauty of this soup is you can add or detract any ingredients and it is still just as good. There is really no right or wrong way to make it. I serve with a warm crust bread and sprinkle a little Parmesan cheese on top.
Ingredients:
- 1 lb boneless chicken ( I usually just buy tenders and cut them up smaller but you can use boneless chicken breasts too. Just pound them and cut them up into smaller pieces)
- 2 Tb Olive Oil
- 2 32 Oz Chicken Broth
- 1 Summer squash (sliced into circles then in half)
- 1 Zucchini (sliced into circles then in half)
- 1 1/2 bag fresh spinach
- 1 large can diced tomatoes with basil, garlic and oregano
- 1 bag of dried tortellini ( I use Barilla 3 cheese)
- 1 can cut green beans
- oregano
- basil
- garlic
For my spices I use a product called Gourmet Garden Herb Blends. They are organic fresh spices that come in a tube and stay fresh for months. I find it way easier to use than fresh but if you feel like using fresh than that works too. I do recommend checking these out because they are a huge time saver!)
Cut up the chicken into bite size pieces then season with salt and pepper. Heat up the oil in a saute pan and add the chicken. I usually add some basil, garlic and oregano to the mix to flavor the chicken. Cook until the chicken is done then add the summer squash and zucchini. Cook for about 5-8 minutes. Add the whole mixture to a soup pot with the chicken broth, can of diced tomatoes, can of green beans. Season with the basil, oregano and garlic. I don not measure I just season and taste. I usually use a couple of squirts of each less oregano tastes vary. I mix it in and taste until I am happy with the flavor. Simmer for about an hour then add cut up spinach to the pot you can use as much as you like. I usually us about half of the bag. Add the tortellini until that is cooked about 10-15 minutes. Add more seasoning if you like and then enjoy.
