The powerful Pomegranate is one of my favorite fruits. Packed with antioxidants, vitamins, fiber and other nutrients that may help prevent cancer, protect memory and aids in digestion. Health benefits aside, I love the flavor – fruity, tart, yet sweet. They remind me of my childhood and I remember the mess we’d make when my mother and I opened this fun fruit!
Since we’re home more this year, I am experimenting with seasonal fruits and vegetables to make snacks and desserts for the family. Dark Chocolate Pomegranate Bark is a nutritional treat that impressed my hubby. I added a variety of nuts which added texture, and extra crunch which enhanced the little bursts of delightful fruity juice!
Ingredients
1 pomegranate – remove seeds make sure to gently pat them
7oz of dark chocolate (You can use baking chocolate, but I actually substituted Hershey’s dark chocolate bars because that’s what I had available.)
Nuts -(I used pistachios, almond slices and walnuts)
Directions
Cut open your pomegranate, and gently remove the seeds. Gently pat them dry, and set aside.
Line a baking sheet with parchment paper.
Melt the chocolate. This can be done in the microwave, but I put water in a pot and then sit a glass bowl on the pot. Place the chocolate in the bowl and stir until fully melted. Remove the bowl from the pot (be careful not to burn yourself) and throw in ½ of the pomegranate seeds. Fold the seeds in gently.
Pour the chocolate on the parchment sheet and use a spatula to spread out the mix. It doesn’t have to cover the entire baking sheet.
I then sprinkle the rest of the seeds. For me, more is best. Then add the nuts. I quartered the chocolate, added pistachio to one section, walnuts to another and lastly almonds to the third section. The last section was nutless.
Store the baking tray in the refrigerator for about 30 minutes. Once firm, break apart pieces and enjoy!!
