We love making pizza on the grill but last night, I just felt like doing something a little bit different. I made stuffed pizza sticks (think breadsticks) and grilled them. It’s not that grilling or the grill marks add anything to them but it kept me from heating up my oven and the house on a 100 degree day! This is very free-form so I’m not even going to give you measurements.
- 1 Ball of pizza dough (ready-made is fine)
- Pizza sauce (it needs to be thick so tomato sauce won’t do)
- Mozzerella cheese, shredded or cut into long strips
- Pepperoni, sausage or filling of your choice, but they must be cut small. I used pepperoni, my kids’ favorite, and used a kitchen shears to cut them into bite-size pieces.
Roll out the pizza dough into a long rectangle so that the dough is about 1/4 inch thick.
Using a pizza cutter, cut strips of dough approximately 3 inches wide.
Using a small spoon or a pastry brush, apply pizza sauce to one half of each strip of dough, leaving a border of dough exposed around each edge.
Add toppings and cheese, again, leaving a border all around.
Take the dough-only half of the strip and fold it over the half you just put toppings on (imagine folding a ruler in half).
With your fingers, press the three edges closed.
Brush some olive oil over the top of each strip. Then turn them over and put olive oil on the bottom as well.
Place the strips on the grill and bake only until the dough starts to brown. Turn them over to brown the other side.
They will be very hot inside and could burn mouths so let them cool off about 5 minutes before serving.

Hi Erika and Erin. Glad you like the sounds of the Pizza Sticks. Erin, your comment reminds me that sometimes we’ve pureed spinach with pizza sauce. It gets hidden by the cheese and toppings so they don’t know the difference. That would work great with these sticks. Thanks for the reminder.
