School is back in session and Juicy Juice asked if I had any lunchbox tips! To be quite honest, one of the things I celebrate at the end of every school year is being lunchbox free for a few months. I’m not one of those moms who can bust out a beautiful bento boxed lunch (Believe me, I’ve tried!) but I do try to keep lunch preparation simple. Mornings can be hectic and stressful but I’ve learned with a little planning they don’t have to be.
Here are some ways I keep lunch preparation easy and fun.
1 I stopped leaving my daughter notes when she was younger but she told me last year that she missed them. I have a stack of index cards in the kitchen. I leave her quick little notes, or a hand drawn pictures (we usually joke about my drawing skills when I pick her up at the end of the day) or her favorite, knock knock jokes!
2 Deconstructed sandwiches or tacos make for an easy, colorful lunch. Supply the ingredients for kids to assemble their sandwiches or they can eat one item at a time.
3 Sort out snack sized bags with veggies, crackers and create a snack basket for the kids to grab their own snacks.
4 Grab some Popsicle sticks (or thin straws) and create fruit or veggie skewers! The kids can help make these the night before.
5 My daughter dislikes crust and had pbj burnout (last a lunch story for another day) but I’ve created homemade pbj uncrustables. They are easy to make and fun to eat. For circular uncrustables, I use a glass cup as a guide to cut off crusts, pinch the sides together with your fingers, then take your fork to create indentations just like a uncrustable.
6 Store juice boxes in the freezer to act like an instant ice pack and it’s a refreshing cool drink.
7 Use a Thermos to keep lunch warm and heat up leftover pastas, soups and even pizza.
8 Preparing the night before keeps morning calm and it gives me a little more family time.
