Avocado toast is my go-to breakfast. It fits all my criteria – tasty, nutritious and easy to make. For a more filling nibble, I top my toast with a fried egg, or toss a pinch of cubed tomatoes and onions on top to be extra fancy. When I lived back in Massachusetts, I never really ate avocados. But then I tried it when I was seeking healthy options for my young daughter, and I’ve been hooked ever since!
I favor beautifully full-flavored, crunchy breads, like sourdoughs or pumpernickel, for my avocado toast. But in a bind, even white bread will do the trick.
Simply, use a fork to mash up your avocado and spread a top your toasted bread. Decorate with a sprinkle of salt, cracked pepper, and red pepper flakes. Go big and drizzle with your favorite olive oil, and a squeeze of lemon. Oh my goodness. So simply, yet so very good. For extra flavor, take the extra step of lightly rubbing a clove of garlic onto the toast before adding the avocado.
