There is nothing like a good knife in the kitchen. It makes prep time so much easier – whether I’m chopping chili ingredients or cutting apple slices at snack time. Shenzhen makes cool knives with ceramic blades. Now I know my way around stainless steel blades, but ceramic is a new addition to my kitchen.
These ceramic knives are made of a ceramic called zirconia, the second hardest material next to diamond. The material’s properties make it particularly resistant to wear and tear, which means it can hold an edge longer than steel blades without the need for re-sharpening.
Other advantages to ceramic include rust proof and the non-stick surface makes the blade easy to clean.
I used the 6” ceramic Chef’s Knife to slice cucumbers, carrots and cheese. It felt light in my hand compared to my steel chef’s blade. The plastic handle was comfortable even after slicing three pounds of carrots. Retailing for $39.99, I think this knife is a good investment whether you are a seasoned everyday cook or a weekend chef.
One feature that I’m still adjusting to is the blade’s color. It’s pure white so it almost looks like a toy and whatever you are cutting colors the blade – it was bright orange like one of my carrot sticks after one of my cutting sessions. It does clean well when rinsed.
There are some other things to keep in mind when shopping for a knife that will work for your needs. According to the manufacturer, even though the ceramic knife is durable, please remember that the ceramic blade does not have the flexibility of metal and extra special care must be taken. Ceramic knives are for slicing purposes and should never be used to pry or cut into bones as this may cause the blade to chip or the tip to snap off. Do not use on frozen foods or hard foods. Do not strike a hard surface with the ceramic blade (either sideways to crush garlic or blade-down to chop bones). If excessive chipping occurs, the ceramic knife will feel dull when cutting.

I learned you must not force a cut because ceramic does not bend or ‘give’ like steel, and could snap. Also I learned food does not stick to ceramic (that would make these great for slicing cheese!). My favorite food to cut is cucumbers.
